#sowebake apple marzipan cake

we love to bake. and with we i mean all 3 of us. it’s a mess fest featuring lots of flour on the floor instead of in the bowl, chocolate on our little boy’s hands, ingredients in the bowl that i didn’t intend to put in there but still (somehow) make sense… & so on. but it’s a lot of fun. apple cake is kind of a no brainer in the autumn/ winter season, so we proudly present our take on a winter cinnamon marzipan cake with apples on top.

apple marzipan cake

  • 2-3 medium sized apples of your choice
  • 1 tbsp cinnamon
  • 80g agave nectar
  • 10g vanilla sugar
  • 2 eggs
  • 230g flour
  • ½ tsp nutmeg
  • 100g marzipan
  • 1 tbsp baking soda
  • 1 tsp salt
  • 1 cup  vanilla soy milk
  • 150g butter


1) mix eggs & sugar +add agave nectar
2) add cinnamon, nutmeg, flour
3) stir in marzipan, vanilla soy milk & butter
4) add salt and baking soda
5) pour dough into greased spring form pan
6) add sliced apples
7) if you wish, sprinkle some cinnamon and sugar over the apple slices
8) preheat oven to 180°C/ 350°F
9) bake for approx. 60 minutes or until a tester comes out clean and the dough looks golden brown
10) share & eat
